宮保豆腐
材料:老(北)豆腐350克,花生米60克,萵筍80克,胡蘿蔔80克,香菇50克調料:生薑、大蒜、蔥、豆瓣醬、雞粉、白糖、生抽、濕澱粉各適量
宮保豆腐的做法：
1.起油鍋,放入花生米,小火將其炒香後舀出,待晾涼後搓去紅衣,待用;
2.老豆腐切成約0.5厘米見方的丁;萵筍去皮後洗淨切成丁,香菇與胡蘿蔔洗淨後也切成丁;姜蒜切成末,郫縣豆瓣醬剁碎,蔥切花;
3.鍋內放入適量的油,待油溫燒至八成熱後下入豆腐丁,將豆腐炸成黃色後撈出瀝干油分,待用;
4.鍋內留少許的油,下入姜蒜末與郫縣豆瓣醬,炒出紅油;
5.下入胡蘿蔔、萵筍、香菇丁，炒勻；
6.放入炸好的豆腐炒勻,加入約50毫升水;
7.放入適量的鹽、雞粉及少許白糖，炒勻後煮約2分鐘；
8.下入蔥花及生抽炒勻,再放入炒好的花生米,倒入濕澱粉炒勻即可.
